Every season we travel to Colombia to visit the Department of Huila, one of the best areas in the country for coffee plant growth and good yield.
This past year, Joaquin participated as a judge in the municipal championship in Guadalupe, where several emerging producers presented their coffees. Thanks to that, we were able to connect with Ancizar, who presented this low-growing Pink Bourbon and placed 5th.
On his farm, La Soledad, he began harvesting this variety after a friend, who gave him 1kg of seeds brought from the municipality of Palestina, also in Huila, recommended it. The crop has been in production for 5 years and is isolated from other lots on the farm. It is located at about 1850 masl, with a relatively cold climate.
After a selective harvest, the coffee is washed and then taken to dry in the sun, where it rests for about 20 days until it reaches optimal humidity.
We roast to order, which means we don't keep roasted coffee in stock at the shop.
As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day.
Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively).
Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays).
